However, chicken is very popular. What is unique about this style is the sauce. It is a tomato-based sauce that is really sweet and sticky. It could be the stickiest and sweetest sauce of all of barbecue sauces.

Carolina style is a dry type that consists of cooking an entire hog. All whole hog is cooked the the ground or in a smoker. Dry rubs are usually heavily applied before the smoking process. Once the pork is done, the meat is separated from the bone. This pulled pork is then mixed with a vinegar-based sauce to create the final dish.

If you want good BBQ Maryland, then consider all your options. You can ask for food that has been cooked with sauce or food that has been cooked without sauce. You can get your sauce on the side.
